Superbowl Sunday!

We had a few people over to watch the game and it really was more about the food than the game, although im soooooo happy for the Saints!! they deserved it! great season and a great way to end it! We celebrated Drew Brees & Co by having many a beer and yummy finger foods :) i used my fail proof Giada recipes, cause on game days failure is not an option!

Peanut Butter Surprise Cookies

A great way to use up leftover halloween candy! Peanut butter anything is automatically homey to me so whenever you have friends coming over, you can't go wrong with some peanut butter and chocolate. Perfect bite size cookies with yummy melted chocolate = smiles all around!

1/2 cup creamy peanut butter
4 tbsp unsalted butter, room temp
1 cup packed light brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1/3 cup sugar, for rolling dough
30-36 mini pb cups (or hershey's kisses) unwrapped and chilled until use

1) Preheat oven to 350, cream peanut butter and butter until smooth in electric mixer. Add brown sugar, beat til combined. Add eggs and vanilla, beat til incorporated

2) In a small bowl, whisk together flour, baking powder, salt. Use low speed and gradually beat in flour mixture in two batches.

3) Scoop off dough by the tablespoon; roll into balls and roll into plated sugar coating completely. Place 2 inches apart on a nonstick insulated baking sheet.

4) Bake for 7 minutes, remove from oven, press chocolates in center of each cookie. Return to oven continue baking until cookies are golden brown, about 6 minutes more. Let cool at least 10 minutes on baking sheet before transferring cookies to cooling rack and cool completely.


Note: I used a commercial silver baking sheet for half of the cookies and a ghetto dark metal baking sheet for the other half. Needless to say, the silver baking sheet cookies turned out better. Use the silver!

Christmas!

Its going down this holiday season! I pick up every single Martha Stewart mag and totally super excited about this one. Especially because I'm thinking about baked goods as gifts to friends and fam this year. I'm really glad she put her gingerbread house recipe in this issue cause jasons mom made it for me last year and it was the best recipe ever. I might even have a pic of it somewhere (its a hello kitty gingerbread house, of course).

Ahh! Can't wait to cellophane and ribbon up some yummy holiday treats :) !

Nectarine Tart

This tart is by far the most beaaaautiful thing that has come out of my oven. Of course its martha's recipe, who else would create such a beautiful work of art? When i first got her Baking Handbook, i saw the photographs of this tart and deemed it "too hard" for me to do. Of course, that same week we had to learn Pie Dough in our cooking class and immediately my mind went to Marthas Nectarine Tart. However, instead of the traditional pie dough (pate brisee), tart dough is used in this recipe. This dough is awesome because you don't need to use a food processor to make it perfect and it is easy, easy, easy:

Tart Dough

6 tablespoons unsalted butter, room temp
1/2 cup confectioners sugar
2 large egg yolks
1 1/2 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons heavy cream

In your electric mixer bowl, cream butter & sugar using the paddle attachment for 2 mins.
Add egg yolks and mix until incorporated, about 1 minute, scraping down the sides as necessary.
Add 3/4 cup flour, mix on low speed for about 30 seconds, until flour is incorporated.
Add remaining 3/4 flour along with salt and cream and mix until you cant see any more flour, about 1 minute.
Turn out dough onto a piece of plastic wrap and shape into a disk. Wrap it up and stick in the the fridge for at least 2 hours before use or overnight. Can also be frozen up to 1 month (thaw in fridge before using).

For this tart, its better to make the dough a day before because it will take forever to finish the tart in just on session (I did, and i think it took me 5 hours total because i started from scra-a-atch)

Alright, so you have your dough (First, preheat oven to 375 degrees)


Lightly flour your work area and roll it out until it is 12-inch round and 1/4 inch thick; fit the dough over a 9-inch round fluted tart pan (with or without a removable bottom. the bottom just makes it easier to remove the tart as a whole. I used one without the removable bottom and it was gobbled up the same). Press the dough lightly into the pan and trim the excess dough flush with the pan (I rolled over the top with a rolling pin and it cut off the excess perfectly). Chill tart shell for 30 minutes, until firm.

Prick the bottom of dough all 0ver with a fork, line with parchment paper leaving at least a 1-inch overhang. Fill with pie weights (i used rice, asian style) so the bottom of the tart doesnt bake up bubbles.



Bake until edges are lightly golden, about 20-25 minutes. Remove from oven and remove the parchment and weights; continue baking until lightly golden all over, 20-25 minutes more.

While this is baking you can proceed to make heart of the tart. that rhymes.

Nectarine Tart

1 1/2 tablespoons all-purpose flour, plus more for dusting
3 tablespoons unsalted butter, room temp
1 large egg
1/4 cup sugar
2 teaspoons freshly squeezed lemon juice
1 tablespoon Chambord or brandy (i used brandy)
1/4 teaspoon salt
8 ripe but firm nectarines (about 2 1/2 pounds)

Get ready to slice some nectarines!



Basically you have your nectarine and you slice all around the seed for four chunks and further slice those 4 pieces into 1/8-inch-thick slices. you will have small pieces and big pieces, which gives the "roses" that you will create, some dimension.

So start with one of the smaller pieces and curl the slice around itself, skin side up. Then wrap another slice around the first and the third slice around the second, so on so forth, until you have achieved a "rose" (1 1/2 inches in diameter), obviously using the large pieces at the end to give it a nice shape. One trick is to make these roses on or around an offset spatula because if you try to transfer it to the baked tart shell with just two hands, it might fall through the middle because the fruit is slippery.






After the first rose, use something small to keep it form moving while you form the next rose, for me it was jordan almonds. haha

if you have extra nectarine pieces, you can stuff them into any gaps that you have. its so preeetty ...

To make the filling:

In a small saucepan, melt butter over medium heat; whisk occasionally until butters solids begin to brown, about 5 minutes. Remove from heat and set aside.

In a medium bowl, whisk together egg, sugar, lemon juice, brandy/chambord, and salt until light in color and doubled in volume, about 2 minutes. Add flour and reserved browned butter and whisk until well combined.

Pour evenly over fruit, use a spoon to fill in any spaces.


Bake ...rotating tart halfway through, until crust is golden brown and filling has slightly puffed, about 40 minutes (mine took only about 35, you should really watch it towards the end because you dont want the fruit to get too dark). Cool completely on a wire rack.




it looks, and is, SOoo good. Sometimes when i finish a project, i think "omg, i do NOT want to ever do this ever again" and i might have felt that way during this tart (remember, this took me like 5 hours) but after seeing how beautiful it came out and all the raves from the people who were lucky enought to eat it. i would DEF make this tart again. Try it!

Glazed Lemon Pound Cake

oooh i can never say no to some good lemon cake. one of my fave things to do is go to starbucks and get their shaken green tea lemonade (1/2 sweet) and a lemon pound cake. and my favorite part of that cake? the thick, sweet, lemony icing on top.  too bad this particular recipe doesn't have a really thick icing, but it does have great flavor and i think one of the easiest and tastiest cakes i've ever baked. 

i learned something in cooking school this week that im really trying to follow: mise en place. it literally means "put in place" in French, and it means to gather all your ingredients all measured out so when you start a recipe, you can really go with the flow and not have to stop to get something measured.  a reason why i never did this was because well, i didn't know there was such a thing, and also because i didnt want to wash all those extra dishes. haha i'll admit it! using an extra bowl for 3 teaspoons of salt is a waste when i can just measure it out from the jar! but i completely understand this approach to cooking and will respect the French :)

Pineapple Mango Upside-Down Cake

This is Martha's recipe from her Baking Handbook, the picture was so gorgeous and sunny i just had to make it over the weekend.  It was a great learning experience because there were so many steps in this cake and it was pretty time consuming, used mostly on cutting up a whole pineapple.  If you don't know how to cut one up i suggest looking on YouTube for videos or going to howtocutapineapple.com.  Seriously.

Anyways, since the directions were kind of a lot to take in, i'll try to break it down in Carmen steps.  
  1. Cut up 1 pineapple and remove the divots using the sharp end of a peeler. (this takes alot of time because you should be prepared to literally take out every single divot)
  2. Slice 4 good 1/4-inch-thick slices and cut out the core with either a small cookie cutter or gently with a knife (what i did)
  3. Peel and cut 1 mango and cut 4 circles from the flesh to fit into the hole that you just cut in the pineapple
  4. Finely chop up all of the remaining flesh from the pineapple and mango and put it in a sieve or a cheesecloth so all the juices drain from the fruit. You want it as dry as possible.
  5. Cut a piece of parchment paper to fit the bottom of a 8x8 square cake pan. butter all around and sides. Beat 1/2 cup brown sugar and 2 tablespoons of butter in a electric mixer for about 2-3 minutes.  When its done lay the brown sugar mixture on top of the parchment. Make sure its flat and even along the pan.  (while i was doing this i had no idea what this was for, but when it was done i realized it created a glaze on top of the pineapple rings.)
  6. Lay the pineapple rings and mango holes on top of the brown sugar



  7. Spread the chopped and drained fruit mixture on top of the rings


  8. Sift together 1.5 cups of flour, 1/2 tsp salt, 1/4 tsp baking powder and 1/4 tsp baking soda.
  9. Make the cake batter: Beat one stick butter with 1 cup sugar until creamy (2-3 minutes); Add 2 eggs (one at a time); Add 1 tsp pure vanilla extract; Add half of flour mixture (step 8); beat until combined; Add 1/4 cup sour cream; Add the rest of the flour mixture; Beat until everything is well combined.
  10. Spread the cake batter on top of the chopped fruit


  11. Bake for about 50 minutes, rotating halfway through and making sure a toothpick comes out clean when its done.
  12. Let cake cool in pan on a wire rack for 30 minutes.  Then flip it over on a cake stand or a plate and remove the pan.
  13. TA-DAAAA!! 
DONE!!! i was SO surprised to see it come out the way it did because i was convinced i was doing things wrong while i was making it.  but it was super yummy and moist. it tastes awesome with vanilla ice cream!  a must try (if you have about 2 hours to spare).

Grilled Cheese Sandwiches with Prosciutto & Simple Meatball Spaghetti


who knew martha had sold food at costco?  she has a whole line of pre-made food like desserts and spreads and even meatballs.  i got these meatballs originally thinking i was going to make some kind of skewer or appetizer but decided to throw them in our last minute meal instead.  it worked out great cause they are pre-cooked and they have a lemony taste to them which was good with the simple trader joes marinara that i used.  instead of garlic bread i decided on grilled cheese with yummy prosciutto.  i sliced up some tillamook sharp cheddar and put it on orowheat buttermilk bread and layed down the prosciutto.  




my dad gave me this square grill pan and i never knew what it was for until the grilled cheese .. it was perfect despite the fact that it got real hot real fast and burned up my 'wiches :(

i was surprised this meal turned out so yum cause it was the first time i didnt follow a recipe and i actually enjoyed the art of cooking. and by art i mean throwing things together and heating it up. heh heh heh

Mini Black and White Cookies

ah ... New York, NY. Whats not to love about NYC?  You've got Magnolia Bakery, SoHO, the Bumble and Bumble Salon (love), the feeling that Times Square gives you, Hot Dog Carts, 5th Ave, Ice skating in Rockefeller Center, Dylans Candy Bar, Christmas window displays and last but def not least: Carrie Bradshaw. The episode of  Sex and the City where she's walking down the street shopping and gnawing on one of those HUGE black and white cookies added so mch nostalgia to the show and honored one of the tastiest icons of NYC. Every bakery will probably have a version of these cookies but i've never seen baby ones like these that Martha has in her Cookies book. I had to make them, especially because i had two of my closest girlfriends coming over for wine and dinner.  The hardest part of these cookies were icing them, being careful with the center line.  I used a small spatula from Williams-Sonoma, like these.

Make sure to flip the cookie over and frost the flat side cause it will roll off the round side if you dont.  Also, lay some parchment paper under the cookie rack after you frost them so cleanup is easy if they drizzle off. 

In the wise words of Carrie Bradshaw: "In a city as cynical as New York, is it still possible to believe in love at first sight?"  If the love is food, then YES!

Martha's Old Fashioned Sugar Cookies

MMmm, my hero Martha Stewart. I couldn't help but buy her Martha Stewart's Cookies book today while I was at Costco. and I vowed that I would make the first cookie that I opened the book to and totallylucked out and got the Old Fashioned Sugar Cookie and (thank god) not the Lebkuchen. Surprisingly I had all the ingredients and was ready to go. I read the recipe about 500 times and mentally prepared myself. Don't mess this up, its only a sugar cookie .. you got this. Let me tell you that I used to be a terror in the kitchen.  My family owns a very successful cafe and I've been hanging out there for about 10 years now. You would think I would know my way around a sifter and a sieve, but sadly, no. Anyways, i felt like i got through the recipe awesomely and while it was baking i sat back and watched my DVR'd America's Best Dance Crew (henceforth known as ABDC, love that show). the thing, i mean timer, beeped and my cookies looked like this:

         Why are mine so flat??? and pale ...

I assume i worked the dough too much and it got all soft and freaked out on me in the oven, but they tasted super good. Moist, not too sweet and a great milk dunker.  Will SOOO make these again. (Recipe here)
